Scottish Shortbread Recipe

Scottish Shortbread is a classic buttery cookie made with flour, sugar, and butter.

Ingredients
  

  • cups all-purpose flour
  • 1 cup butter room temperature
  • ½ cup white sugar
  • 1 tablespoon white sugar for sprinkling

Instructions
 

  • Preheat your oven to 300°F (150°C).
  • Gather all ingredients and allow the butter to soften to room temperature.
  • In a large mixing bowl, combine the flour, butter, and ½ cup sugar.
  • Mix until a soft dough forms and holds together when pressed.
  • Press the dough evenly into an ungreased 11½ x 7½-inch jelly roll pan.
  • Smooth the surface with your hands or the back of a spoon.
  • Use a fork to prick the dough all over. This helps prevent puffing during baking.
  • Sprinkle the remaining tablespoon of sugar evenly over the top.
  • Bake for 20–30 minutes or until the edges are lightly golden brown.
  • Remove from the oven and immediately cut into squares or fingers while still warm.
  • Allow the shortbread to cool completely in the pan.
  • Carefully remove and serve
