Ingredients

  • - 2 large sweet potatoes about 1 pound, peeled and sliced into ¼-inch rounds
  • - 2 tablespoons olive oil
  • - 1 teaspoon ground cinnamon
  • - ½ teaspoon sea salt
  • - ¼ teaspoon freshly ground black pepper
  • - 3 ounces crumbled feta cheese about ¾ cup
  • - 2 tablespoons honey
  • - 1 tablespoon fresh thyme leaves or chopped fresh parsley

Instructions

  • Preheat the oven to 425°F (220°C). Line a large baking sheet with parchment paper.
  • Peel the sweet potatoes and slice them into rounds approximately ¼-inch thick. Try to keep the slices similar in thickness so they cook evenly.
  • Place the sweet potato rounds in a large bowl. Add the olive oil, cinnamon, sea salt, and black pepper.
  • Toss gently until every slice is evenly coated with the seasoning and oil.
  • Arrange the sweet potato slices in a single layer on the prepared baking sheet. Leave a little space between the rounds so they roast rather than steam.
  • Roast for 10–12 minutes.
  • Carefully flip each round and return the baking sheet to the oven.
  • Continue roasting for another 10–13 minutes, or until the sweet potatoes are tender in the center and golden and lightly crisp around the edges.
  • Remove the roasted sweet potatoes from the oven and immediately scatter the crumbled feta over the warm rounds.
  • Drizzle the honey evenly over the feta and sweet potatoes.
  • Finish the Roasted Sweet Potato Rounds with Honey & Feta with fresh thyme leaves or chopped parsley.
  • Serve warm as an appetizer, side dish, or snack.

Notes

You can substitute goat cheese for feta if you prefer a softer, creamier topping.
Maple syrup can replace honey for a slightly different flavor profile.
For a little heat, add a pinch of chili flakes or cayenne pepper along with the cinnamon.
A drizzle of balsamic glaze can add another layer of sweet-tangy flavor.
For a heartier appetizer, top the roasted sweet potato rounds with chopped walnuts or pecans along with the feta.
