Ingredients

  • 1 12-ounce package dried rice noodles
  • 1 teaspoon vegetable oil
  • 1 onion finely diced
  • 3 cloves garlic minced
  • 2 cups diced cooked chicken breast
  • 1 small head cabbage thinly sliced
  • 4 carrots thinly sliced
  • 1/4 cup soy sauce
  • 2 lemons cut into wedges

Instructions

  • Gather all ingredients.
  • Place the rice noodles in a large bowl and cover with warm water. Let them soak for 8–10 minutes until softened. Drain well.
  • Heat the vegetable oil in a large wok or skillet over medium-low heat.
  • Add the onion and garlic, then cook for 3–5 minutes until the onion becomes soft and fragrant.
  • Stir in the cooked chicken, cabbage, carrots, and soy sauce. Cook until the cabbage begins to soften.
  • Add the softened noodles to the skillet.
  • Toss everything together, stirring constantly until the noodles are heated through and evenly coated with the sauce. This Quick and Easy Pancit Recipe comes together in just a few minutes once the noodles are added.
  • Transfer to a serving platter and garnish with fresh lemon wedges before serving.

Notes

  • Fresh calamansi can be used instead of lemons for a more authentic Filipino flavor.
  • Serve with spring rolls or steamed vegetables for a complete meal.
  • Add shrimp or beef if you'd like extra protein.
  • Garnish with sliced green onions for added freshness.
