Preheat oven to 425°F (220°C) or 200°C fan.
Pound chicken breasts to even thickness (about 1.5 cm) for even cooking.
Mix all seasoning ingredients in a small bowl.
Line a baking tray with parchment paper.
Place chicken on the tray and drizzle with olive oil.
Rub oil over chicken, then sprinkle seasoning evenly.
Flip chicken and repeat oil and seasoning on the other side.
Bake for 18 minutes or until internal temperature reaches 165°F (75°C).
Remove from oven and let rest for 3–5 minutes.
Garnish with fresh parsley and serve.
