Jalapeno Peach Chicken Skewers

Jalapeno Peach Chicken Skewers combine juicy chicken, ripe peaches, and jalapenos in a sweet and spicy air fryer recipe.

Ingredients
  

  • Chicken
  • 2 pounds boneless skinless chicken breasts, cut into 1-inch cubes
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon chili powder
  • 2 tablespoons extra virgin olive oil
  • Skewers
  • 15 wooden skewers soaked for 30 minutes
  • 4 yellow peaches quartered and halved (32 pieces)
  • 3 medium jalapeno peppers halved, seeded, and cut into chunks
  • Peach Glaze
  • ½ cup peach preserves
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon soy sauce
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • ½ teaspoon minced garlic
  • ½ teaspoon kosher salt
  • teaspoon black pepper
  • teaspoon red pepper flakes

Instructions
 

  • Soak the wooden skewers in water for at least 30 minutes.
  • In a large bowl, combine the chicken cubes with salt, black pepper, chili powder, and olive oil. Toss until evenly coated.
  • Assemble each skewer by alternating peach pieces, chicken, and jalapeno chunks until filled.
  • Preheat the air fryer to 375°F (190°C).
  • Lightly brush the assembled skewers with olive oil to prevent sticking.
  • Arrange the Jalapeno Peach Chicken Skewers in a single layer inside the air fryer basket. Cook in batches if necessary.
  • Air fry for 11–12 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
  • Meanwhile, combine all peach glaze ingredients in a saucepan over medium heat. Stir until smooth and warmed through.
  • Brush the cooked skewers generously with the warm peach glaze.
  • Serve immediately while warm.

Notes

Serve with rice, grilled corn, roasted potatoes, fresh salad, or buttery dinner rolls. Fresh parsley or cilantro makes a wonderful garnish. For outdoor cooking, these skewers can also be grilled over medium heat until the chicken is fully cooked.
