Preheat the oven to 170°C (325°F).
In a mixing bowl, combine crushed cookies, sweetener, and melted butter. Mix until well combined.
Press the mixture into a greased 8-inch springform pan to form the crust.
In a high-speed blender, add all filling ingredients and blend until completely smooth.
Pour the mixture over the crust evenly.
Bake for 45–55 minutes, or until the center is set but slightly soft.
Remove from the oven and allow the healthy cheesecake to cool completely.
Refrigerate for at least 4 hours before slicing and serving.
