Ground Turkey Sweet Potato Skillet

A quick one-pan ground turkey sweet potato skillet made with black beans, spices, and melted cheese.

Ingredients
  

  • 1 lb sweet potatoes
  • 2 tablespoons olive or avocado oil
  • 1 small yellow onion diced
  • 1 bell pepper diced
  • 1 clove garlic minced
  • 1 lb ground turkey
  • ½ cup water
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon cayenne pepper
  • 1 can black beans drained and rinsed
  • 1 cup shredded cheese
  • ¼ cup chopped cilantro

Instructions
 

  • Cook the sweet potatoes by microwaving them until fork tender, then let cool.
  • Heat oil in a large skillet over medium heat. Add onion and sauté until softened.
  • Add bell pepper and cook for a few minutes, then stir in garlic.
  • Add ground turkey and cook until browned, breaking it apart as it cooks.
  • Peel and dice the sweet potatoes into bite-sized pieces.
  • Add spices and water to the skillet, stirring well to coat the turkey.
  • Add sweet potatoes, black beans, cheese, and cilantro. Stir until fully combined and cheese melts.
  • Serve the ground turkey sweet potato skillet warm with your favorite toppings.

Notes

This sweet potato turkey recipe works great in wraps, burrito bowls, or even stuffed in tortillas. You can also add corn or zucchini for extra vegetables.
