Ingredients
  

Homemade Granola

  • 4 cups old-fashioned whole oats
  • 1/4 cup coconut oil melted
  • 1/2 cup maple syrup
  • 2 cups coconut flakes
  • 1 tablespoon ground cinnamon
  • 1 1/2 cups dried cranberries
  • 1/2 teaspoon sea salt
  • 2 tablespoons date sugar optional

For the Parfait Board

  • 4 cups plain or vanilla Greek yogurt
  • Fresh strawberries
  • Blueberries
  • Raspberries
  • Blackberries
  • Kiwi slices
  • Banana slices
  • Mango chunks
  • Homemade granola
  • Honey or maple syrup for drizzling
  • Fresh mint leaves for garnish

Instructions
 

Make the Granola

  • Preheat the oven to 325°F (163°C).
  • Line a baking sheet with parchment paper.
  • In a large mixing bowl, combine oats, coconut flakes, maple syrup, and melted coconut oil.
  • Stir until all ingredients are evenly coated.
  • Spread the mixture evenly onto the prepared baking sheet.
  • Bake for 10–15 minutes, stirring occasionally to ensure even browning.
  • Allow the granola to cool.
  • Stir in cinnamon, sea salt, and dried cranberries.
  • Let the granola rest for 20 minutes before serving or storing.

Assemble the Fruit and Yogurt Parfait Board

  • Place yogurt into small serving bowls and position them on a large serving board.
  • Arrange fresh fruit around the yogurt bowls.
  • Fill small bowls with homemade granola.
  • Add honey or maple syrup in a small serving dish.
  • Garnish with fresh mint leaves.
