Ingredients
  

  • 1 –2 tablespoons olive oil
  • 1 pound ground beef
  • 1 large onion diced
  • 4 cloves garlic minced
  • 1 15-ounce can diced tomatoes
  • 1 15-ounce can tomato sauce or tomato puree
  • cup tomato paste
  • 4 cups chicken broth
  • 1 –2 cups water
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • Black pepper to taste
  • 8 ounces bowtie pasta or sturdy pasta

Instructions
 

  • Heat a large soup pot over medium-high heat. Add olive oil and heat until shimmering.
  • Add ground beef, diced onion, and minced garlic. Cook until the beef is browned and fully cooked, stirring occasionally. Drain excess fat if needed.
  • Stir in diced tomatoes with juice, tomato sauce, tomato paste, chicken broth, Italian seasoning, salt, black pepper, and pasta.
  • Bring the Easy Lasagna Soup Recipe to a boil over high heat.
  • Reduce heat to medium and simmer for 10–15 minutes, stirring often, until the pasta is tender.
  • Add water or extra broth as needed to adjust the consistency.
  • Serve hot topped with ricotta, mozzarella, Parmesan cheese, and fresh parsley.

Notes

  • Serve with garlic bread or a crisp green salad.
  • Add spinach or zucchini for extra vegetables.
  • Fresh basil makes an excellent garnish alongside parsley.
  • If making ahead, cook pasta separately to avoid over-softening.
