For the Pineapple
- 1 large pineapple peeled, cored, and sliced into ¾-inch thick rings
For the Glaze
- 1/3 cup dark brown sugar
- 3 tablespoons pure maple syrup
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon vanilla extract
- 3/4 teaspoon coarse sea salt for finishing
Peel, core, and slice the pineapple into even ¾-inch thick rings.
In a small bowl, mix together the brown sugar, maple syrup, cinnamon, and vanilla until a thick glaze forms. Let it sit for about 1 minute.
Preheat your grill to 350°F over medium heat.
Coat both sides of every pineapple ring generously with the glaze.
