Easy Greek Chicken Rice Bowl is a one-pan meal with seasoned chicken and lemon rice.

Ingredients
  

Chicken & Rice

  • 2 pounds boneless skinless chicken thighs
  • 2 tablespoons dried oregano divided
  • 1 tablespoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 1/2 teaspoons salt
  • 3/4 teaspoon black pepper
  • 4 tablespoons olive oil
  • 1 white onion chopped
  • 1 cup long grain rice
  • 2 cups chicken broth
  • 1 lemon zest and juice

Greek Salad

  • 2 tomatoes
  • 1/2 cucumber
  • 1/2 red onion
  • 3.5 ounces feta cheese

Tzatziki Sauce

  • 1 cup Greek yogurt
  • 1/2 cucumber
  • 1/2 clove garlic
  • 2 tablespoons fresh dill

Lemon juice (optional)

  • Optional for Serving
  • Fresh parsley
  • Pita bread
  • Lemon wedges

Instructions
 

  • Season chicken with oregano, paprika, cumin, garlic powder, salt, and pepper.
  • Heat olive oil in a large pan and brown the chicken on both sides. Remove and set aside.
  • In the same pan, sauté onions until softened.
  • Add rice and stir to coat with oil and onions.
  • Mix chicken broth with remaining oregano and lemon zest and juice.
  • Pour broth mixture over rice and stir.
  • Place chicken on top, cover, and cook for 20 minutes until rice is tender and chicken is cooked through.
  • Prepare salad by chopping tomatoes, cucumber, onion, and feta.
  • Mix tzatziki ingredients until smooth.
  • Assemble the Easy Greek Chicken Rice Bowl with rice, chicken, salad, and tzatziki.
  • Garnish with parsley and serve with pita and lemon wedges.

Notes

  • Substitute rice with quinoa or bulgur.
