Easy French Toast Roll Ups

Easy French toast roll ups filled with peanut butter and banana.

Ingredients
  

  • 2 large eggs
  • Splash of milk
  • 1/4 –1/2 teaspoon ground cinnamon
  • 6 slices whole wheat bread stale or day-old
  • 4 –6 tablespoons peanut butter
  • 1 medium banana thinly sliced
  • Optional: extra cinnamon
  • Butter for greasing

Instructions
 

  • In a shallow bowl, whisk together eggs, milk, and cinnamon.
  • Trim crusts from bread and flatten each slice with a rolling pin.
  • Spread peanut butter evenly over each slice.
  • Add banana slices in a line along one edge.
  • Roll tightly from the banana side.
  • Dip each roll-up into the egg mixture, coating all sides.
  • Heat butter in a pan over medium heat.
  • Cook roll-ups for 1–2 minutes per side until golden brown.
  • Let cool slightly and serve warm.
