Easy Cinnamon Roll Blondies

Ingredients
  

For the Blondies

  • 1/2 cup unsalted butter melted and cooled slightly
  • 1 cup packed light brown sugar
  • 1 large egg
  • 1 large egg yolk
  • 1 tablespoon vanilla extract
  • 1 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt

For the Cinnamon Sugar

  • 1 tablespoon cinnamon
  • 1/4 cup white sugar

For the Icing

  • 1 tablespoon cream cheese
  • 1 tablespoon heavy cream
  • 3/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions
 

  • Preheat your oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper.
  • In a bowl, whisk melted butter and brown sugar until smooth.
  • Add egg, egg yolk, and vanilla extract. Mix well.
  • In another bowl, combine flour, baking powder, and salt.
  • Gently fold dry ingredients into wet ingredients until just combined.
  • Pour batter into the prepared pan.
  • Mix cinnamon and sugar, then drop spoonfuls over the batter and swirl with a knife.
  • Bake for 30–40 minutes until golden at the edges. The center should remain soft.
  • Let cool completely.
  • For icing, heat cream cheese, cream, powdered sugar, vanilla, and salt on low heat, whisking until smooth.
  • Drizzle icing over cooled Cinnamon Roll Blondies, slice, and serve.

Notes

  • You can substitute heavy cream with milk if needed.
  • Serve warm for a gooey texture or chilled for firmer bars.
