Easy Chicken Souvlaki Tray Bake

A one-pan Chicken Souvlaki Tray Bake with marinated chicken, roasted potatoes, and vegetables.

Ingredients
  

Marinade

  • 60 ml extra-virgin olive oil
  • 1 tbsp freshly minced garlic
  • 2 tbsp fresh lemon juice
  • 1 tbsp red wine vinegar
  • 1 tbsp honey
  • 1 tbsp brown sugar
  • 2 tsp dried oregano
  • 1 tsp sweet paprika
  • tsp sea salt flakes
  • ½ tsp black pepper

Chicken & Vegetables

  • 600 g potatoes sliced into thin wedges
  • 1 red onion cut into wedges
  • 200 g capsicums bell peppers, sliced
  • 1 kg boneless skinless chicken thighs

To Serve

  • 100 g feta cheese
  • Fresh dill
  • Toasted pita bread
  • Tzatziki
  • Lemon wedges

Instructions
 

  • Preheat oven to 220°C (425°F).
  • In a bowl, mix all marinade ingredients until well combined.
  • Place potatoes, onion, and capsicum in a large baking tray. Add 1 tablespoon of marinade and toss. Spread evenly.
  • Coat the chicken with remaining marinade.
  • Arrange chicken on top of vegetables in a single layer.
  • Roast for 28 minutes until chicken is cooked and potatoes are tender.
  • Broil for 2 minutes to crisp edges.
  • Finish with feta, dill, olive oil drizzle, and black pepper.
  • Serve your Chicken Souvlaki Tray Bake with pita, tzatziki, and lemon wedges.

Notes

You can substitute chicken thighs with chicken breast, but reduce cooking time slightly to avoid dryness. Serve with a fresh salad for a lighter meal.
