Ingredients

  • 1/2 cup diced plum tomato
  • 1/2 cup shredded mozzarella cheese
  • 1/2 teaspoon dried basil
  • 1 pound thinly sliced boneless chicken breast cutlets
  • 1 tablespoon oil
  • 1 package chicken Parmesan-style seasoning mix halal-certified if needed
  • 1/2 cup spaghetti sauce or marinara sauce
  • Nonstick cooking spray

Instructions

  • Preheat the oven to 375°F (190°C). Line a shallow baking pan with foil and lightly coat it with nonstick cooking spray.
  • Combine the diced tomatoes, shredded mozzarella, and dried basil in a small bowl.
  • Lay the chicken cutlets flat on a clean work surface. Divide the tomato and mozzarella mixture evenly among the centers of the chicken pieces.
  • Carefully roll each chicken cutlet around the filling, keeping as much of the cheese and tomato inside as possible.
  • Brush the outside of each chicken roll with oil.
  • Pour the seasoning mix into a shallow dish. Gently coat each roll with seasoning, then discard any unused mixture that has come into contact with raw chicken.
  • Arrange the rolls seam-side down in the prepared baking pan.
  • Bake the Chicken Rollatini recipe for about 30 minutes, or until the chicken reaches a safe internal temperature of 165°F (74°C).
  • Warm the marinara sauce while the chicken finishes cooking.
  • Serve the chicken rollatini hot with the warm marinara sauce spooned over or alongside it.

Notes

For a slightly different filling, add chopped spinach to the mozzarella and tomato mixture. Provolone or a mild Italian-style cheese can also replace the mozzarella if preferred.
