Easy Avocado Shrimp Ceviche Recipe

Ingredients
  

  • 1 pound chopped uncooked shrimp
  • ½ cup fresh lime juice about 6 limes
  • 2 chopped Roma tomatoes
  • ¼ cup diced red onion
  • 1 diced jalapeño pepper
  • ¼ cup chopped cilantro
  • 3 small diced avocados
  • Salt and pepper to taste

Instructions
 

  • In a large bowl, combine chopped shrimp with fresh lime juice. Let sit for 15 minutes until shrimp turns opaque.
  • Add tomatoes, red onion, jalapeño, and cilantro. Mix well.
  • Cover and refrigerate for 1 hour to allow flavors to develop.
  • Gently fold in diced avocado just before serving.
  • Season with salt and pepper to taste.

Notes

  • Serve with tortilla chips or lettuce cups.
  • You can substitute shrimp with cooked fish if preferred.
