Ingredients

For the Crust

  • 1½ cups cottage cheese
  • 1½ cups all-purpose flour
  • 2 –3 tablespoons extra flour for dusting
  • 1½ teaspoons baking powder
  • 1 teaspoon salt
  • 1 –2 tablespoons olive oil

For the Pizza

  • ½ –¾ cup pizza sauce
  • ¾ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese

Optional Toppings

  • Red pepper flakes
  • Hot honey
  • Fresh basil
  • Italian seasoning
  • Extra olive oil

Instructions

  • Preheat your oven to 450°F (230°C) and position the oven rack near the top.
  • Blend the cottage cheese until completely smooth.
  • In a large bowl, combine the blended cottage cheese, flour, baking powder, and salt. Mix until a shaggy dough forms, then knead gently until it comes together. If the dough feels sticky, dust it lightly with additional flour.
  • Place the dough on a sheet of parchment paper set on a pizza pan or baking sheet. Press it into a 12-inch circle, keeping the crust fairly thin for crispier results.
  • Brush the surface of the dough with olive oil.
  • Bake the Cottage Cheese Pizza crust for 10 minutes until it is lightly puffed and just beginning to turn golden.
  • Remove the crust from the oven and spread the pizza sauce evenly over the top. Sprinkle with the mozzarella and Parmesan cheeses.
  • Return the pizza to the oven and bake for another 5 minutes until the cheese has fully melted.
  • Switch the oven to broil and cook for 2–3 minutes until the cheese is bubbly and the crust edges become beautifully golden brown.
  • Slice and serve with red pepper flakes, a drizzle of olive oil or hot honey, and extra pizza sauce if desired.

Notes

  • Rao's marinara works wonderfully as the pizza sauce.
  • Garnish with fresh basil after baking for extra freshness.
  • Replace part of the all-purpose flour with whole wheat flour for added fiber.
  • Feel free to experiment with cheeses like provolone, Monterey Jack, or cheddar.
