Preheat oven to 160°C (340°F) and line a 20cm springform pan with parchment paper.
Separate egg whites and egg yolks into two bowls.
In the yolk bowl, mix condensed milk, Greek yogurt, lemon juice, and zest until smooth.
In the second bowl, whisk egg whites until stiff peaks form.
Gently fold the egg whites into the yolk mixture in batches, keeping the mixture airy.
Pour the batter into the prepared pan.
Place the cake pan into a larger pan and add water around it (water bath about 3 cm high).
Bake the Cloud Cake Recipe for about 50–60 minutes or until set.
Let cool completely before removing from the pan.
Dust with powdered sugar if desired and serve.
