Heat olive oil and butter in a large skillet over medium-high heat.
Add cubed potatoes, season with garlic powder, salt, and pepper. Cook for 10–15 minutes until crispy, stirring occasionally. Remove and set aside.
Reduce heat to medium and cook chicken sausage slices for 2–3 minutes per side until browned.
Add bell peppers, onion, and zucchini. Cook until vegetables are tender and onions are translucent.
Stir in minced garlic and cook for 30 seconds until fragrant.
Season with Italian seasoning and paprika.
Return potatoes to the skillet and mix well.
Cook for another 1–2 minutes, adjust seasoning, and serve hot.
