Ingredients
  

  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 3 red potatoes cubed
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 12–14 oz chicken sausage, sliced into ½-inch rounds
  • 2 bell peppers diced
  • 1 medium onion diced
  • 1 zucchini sliced into bite-size pieces
  • 2 garlic cloves minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • Salt and pepper to taste

Instructions
 

  • Heat olive oil and butter in a large skillet over medium-high heat.
  • Add cubed potatoes, season with garlic powder, salt, and pepper. Cook for 10–15 minutes until crispy, stirring occasionally. Remove and set aside.
  • Reduce heat to medium and cook chicken sausage slices for 2–3 minutes per side until browned.
  • Add bell peppers, onion, and zucchini. Cook until vegetables are tender and onions are translucent.
  • Stir in minced garlic and cook for 30 seconds until fragrant.
  • Season with Italian seasoning and paprika.
  • Return potatoes to the skillet and mix well.
  • Cook for another 1–2 minutes, adjust seasoning, and serve hot.

Notes

  • Use beef sausage instead of chicken if preferred.
  • Add spinach at the end for extra nutrients.
  • Serve with a fried egg on top for breakfast variation.
