  • 6 slices turkey bacon cooked and diced
  • 4 ounces crumbled blue cheese
  • 1 cup cherry tomatoes halved
  • 1 head romaine lettuce chopped (about 8 ounces)
  • 1 large avocado diced
  • 1 pound cooked chicken breast diced
  • ½ small red onion very thinly sliced

Red Wine Vinaigrette

  • ¼ cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 garlic clove minced
  • teaspoons Dijon mustard
  • 1 teaspoon Italian seasoning
  • Pinch of fine sea salt
  • Freshly ground black pepper to taste

Instructions
 

  • In a small bowl or jar, whisk together the olive oil, red wine vinegar, garlic, Dijon mustard, Italian seasoning, salt, and black pepper until smooth and emulsified.
  • In a large serving bowl, combine the chopped romaine, cooked chicken, diced turkey bacon, cherry tomatoes, avocado, red onion, and blue cheese.
  • Pour the vinaigrette over the salad.
  • Gently toss everything together until evenly coated without breaking up the avocado.
