Chewy 3-Ingredient Peanut Butter Cookies

These chewy peanut butter cookies use only 3 simple ingredients.

Ingredients
  

  • 1 cup smooth peanut butter
  • 3/4 cup granulated sugar
  • 1 large egg

Instructions
 

  • Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
  • In a large bowl, combine the peanut butter, granulated sugar, and egg.
  • Mix with a spatula until the dough is smooth and fully combined.
  • Scoop the dough into 24 equal portions, about 1 tablespoon each.
  • Roll each portion into a ball and place them 2 inches apart on the prepared baking sheets.
  • Use a fork to flatten each dough ball into a crosshatch pattern about 2 inches wide.
  • Bake for 5 minutes.
  • Rotate the baking sheets between racks and turn them front to back.
  • Continue baking for another 5–7 minutes until the cookies are lightly puffed and the edges are firm.
  • Let the Chewy 3-Ingredient Peanut Butter Cookies cool completely on the baking sheets for about 30 minutes before serving.

  • Crunchy peanut butter can be used for added texture.
  • Brown sugar may replace granulated sugar for a deeper caramel flavor.
