Preheat the oven to 350°F (175°C).
Lightly spray a mini muffin pan with cooking spray.
Press one wonton wrapper into each muffin cup.
Bake for 5–7 minutes, or until the wontons become lightly golden and crisp.
Remove from the oven and carefully transfer the wonton cups to a cooling rack.
Prepare the Buffalo Chicken Filling
In a large mixing bowl or stand mixer, combine:
Cream cheese
Blue cheese crumbles
Blue cheese dressing
Frank's Hot Sauce
Beat until smooth and fully combined.
Add shredded rotisserie chicken.
Mix until the chicken is evenly incorporated and slightly shredded into the mixture.
Assemble and Bake
Fill each wonton cup with approximately 1 tablespoon of buffalo chicken mixture.
Arrange the filled cups on a baking sheet.
Cover tightly with aluminum foil.
Bake at 300°F (150°C) for 10 minutes or until the filling is hot, creamy, and gooey.
Remove from the oven.
Garnish with additional blue cheese crumbles and freshly chopped chives.
Serve warm.
