Ingredients
  

  • 4 wholemeal bagels sliced in half
  • 80 g low-fat soft cheese
  • 40 g ready-to-eat dried apricots finely chopped
  • 2 ripe bananas sliced

Dairy-Free Option

  • Omit the soft cheese.
  • Mash the bananas and spread directly onto the toasted bagels before topping with chopped apricots.

Instructions
 

  • Preheat the grill or toaster.
  • Lightly toast the cut sides of each wholemeal bagel until golden.
  • In a small bowl, mix the low-fat soft cheese with the chopped dried apricots until evenly combined.
  • Spread the apricot cream cheese mixture evenly over the bottom halves of each toasted bagel.
  • Arrange the sliced bananas over the filling.
  • Place the remaining bagel halves on top to make sandwiches.
