Ingredients

  • For the Chia Pudding
  • ½ cup chia seeds
  • 2 cups unsweetened non-dairy milk
  • 4 tablespoons unsweetened applesauce
  • 1 –2 tablespoons pure maple syrup
  • 1 –1½ teaspoons apple pie spice
  • ¼ cup dairy-free yogurt
  • For the Cinnamon Apples
  • 1 large apple such as Honeycrisp
  • 2 teaspoons coconut oil
  • 1 tablespoon pure maple syrup
  • 1 teaspoon ground cinnamon
  • Optional Toppings
  • Additional ground cinnamon
  • Extra maple syrup
  • Chopped walnuts or pecans
  • Fresh apple slices

Instructions

  • Step 1: Prepare the chia pudding mixture
  • Add the chia seeds, non-dairy milk, applesauce, maple syrup, apple pie spice, and dairy-free yogurt to a large mixing bowl, airtight container, or mason jar.
  • Step 2: Mix thoroughly
  • Stir or whisk until all the ingredients are evenly combined.
  • Make sure the chia seeds are distributed throughout the liquid rather than clumping together.
  • Step 3: Refrigerate
  • Cover the container and refrigerate for at least 1 hour, or preferably overnight.
  • The chia seeds will absorb the liquid and create a thick, creamy pudding.
  • For a smoother consistency, stir the mixture again after the first 10–15 minutes of chilling.
  • Step 4: Prepare the apple
  • When ready to serve, wash and core the apple.
  • Chop it into small, bite-sized pieces.
  • Step 5: Cook the cinnamon apples
  • Add the chopped apple, coconut oil, maple syrup, and ground cinnamon to a skillet.
  • Place over medium heat.
  • Step 6: Sauté until tender
  • Cook for approximately 5 minutes, stirring occasionally, until the apples soften and become lightly golden.
  • The maple syrup and cinnamon should coat the apple pieces in a fragrant, glossy mixture.
  • Step 7: Assemble the pudding
  • Spoon the chilled Apple Pie Chia Pudding into individual serving bowls or jars.
  • Top each portion with the warm cinnamon apples.
  • Step 8: Garnish and serve
  • Finish with an extra pinch of cinnamon and a drizzle of maple syrup, if desired.
  • Serve immediately, or allow the apples to cool before assembling for a completely chilled breakfast.

Notes

For a richer pudding, use unsweetened coconut milk or a creamy oat milk.
If you prefer a lighter consistency, almond milk works beautifully.
Unsweetened applesauce adds apple flavor and helps create a smooth texture without making the pudding overly sweet.
