Air Fryer Zucchini and Squash

Air Fryer Zucchini and Squash is a quick and healthy vegetable side dish.

Ingredients
  

  • 1 large zucchini
  • 1 large yellow squash
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • ¼ teaspoon kosher salt
  • ¼ teaspoon black pepper

Instructions
 

  • Preheat your air fryer to 400°F (200°C).
  • Trim the ends from the zucchini and yellow squash.
  • Quarter each vegetable lengthwise, then cut into 1-inch chunks.
  • Place the vegetables into a large mixing bowl.
  • Drizzle with olive oil.
  • Sprinkle with Italian seasoning, garlic powder, salt, and pepper.
  • Toss until every piece is evenly coated.
  • Arrange the vegetables in a single layer inside the air fryer basket without overcrowding.
  • Cook the Air Fryer Zucchini and Squash for 7–8 minutes, shaking or turning halfway through cooking.
  • Remove once the vegetables are tender with lightly browned edges.
  • Serve immediately while warm.

Notes

  • Yellow squash and zucchini cook at nearly the same rate, making them an ideal pairing.
  • Fresh vegetables produce the best texture.
  • You can substitute avocado oil for olive oil.
  • Add onion chunks or mushrooms for more variety.
  • Fresh thyme, rosemary, or oregano also work beautifully.
