Ingredients
  

  • 10 Brussels sprouts
  • 1 –2 shallots sliced
  • 1 cup zucchini diced
  • 1/3 cup green bell pepper chopped
  • 1/3 cup red bell pepper chopped
  • 10 cherry tomatoes
  • 1/4 teaspoon salt
  • 1/4 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 1 tablespoon olive oil

Instructions
 

  • Preheat the air fryer to 380°F (193°C) for about 5 minutes or according to your air fryer manufacturer's instructions.
  • Place the Brussels sprouts, shallots, zucchini, green bell pepper, red bell pepper, and cherry tomatoes into a large mixing bowl.
  • Add the olive oil, salt, paprika, and garlic powder.
  • Toss thoroughly until all vegetables are evenly coated.
  • For extra flavor, allow the vegetables to marinate for 10–15 minutes.
  • Thread the vegetables onto skewers, alternating colors and textures for an attractive presentation.
  • Arrange the Air Fryer Vegetable Skewers in a single layer inside the air fryer basket, leaving space between each skewer.
  • Cook at 380°F for 6–8 minutes.
  • Carefully flip the skewers and continue cooking for another 3–5 minutes until the vegetables are tender and slightly crispy.
  • Remove from the air fryer and serve immediately with fresh herbs or your favorite dipping sauce.

Notes

  • Serve alongside grilled chicken, fish, beef, or plant-based proteins.
  • Pair with hummus, garlic sauce, tzatziki, or tahini dressing.
  • Increase the seasoning quantities if you prefer bolder flavors.
  • Cherry tomatoes become very soft when cooked; handle carefully when flipping.
