Preheat the oven to 400°F (200°C). Lightly grease a baking sheet with olive oil or nonstick cooking spray.
Shred the zucchini using a box grater. Transfer it to a clean kitchen towel, gather the towel around the zucchini, and firmly squeeze out as much excess moisture as possible.
Finely grate the garlic.
Place the drained zucchini, garlic, breadcrumbs, Parmesan, egg, chives, parsley, basil, oregano, salt, and black pepper in a medium mixing bowl.
Stir until everything is evenly combined and the mixture holds together when pressed.
Scoop approximately 1 tablespoon of the mixture at a time. Gently shape it into a small compact ball or slightly flattened bite.
Arrange the Zucchini Garlic Bites on the prepared baking sheet, leaving a little space between them.
Bake for 15–18 minutes, or until set and golden around the edges. For more even browning, carefully turn them near the end of cooking.
Serve warm with marinara sauce for dipping.
