Yaki Udon Stir Fried Udon Noodles
Yaki udon is a Japanese stir-fried noodle dish.

Main Ingredients
- 2 packets udon noodles about 13 oz / vacuum-packed or frozen
- 2 1/2 cups stir-fry vegetables chopped (mushrooms, bok choy, onions recommended)
- 2 scallions cut into 2-inch pieces
- 1/2 lb ground beef or chicken halal-friendly
- 1 tablespoon avocado oil
Yaki Udon Noodle Sauce (halal-friendly)
- 2 1/2 tablespoons dark soy sauce
- 2 tablespoons oyster sauce use halal-certified
- Mirin substitute: 1 tablespoon rice vinegar + 2 teaspoons brown sugar
- 2 teaspoons brown sugar additional
- 1/2 teaspoon rice vinegar
Make the Sauce: In a small bowl, mix all sauce ingredients until well combined. Set aside.
Cook the Udon Noodles: Bring a pot of water to a boil. Add udon noodles and gently separate for 1–2 minutes until pliable. Do not overcook. Drain and rinse under cold water. Toss lightly with oil if not using immediately.
Stir Fry: Heat a large pan or wok over high heat and add avocado oil.
Add ground beef or chicken and cook, breaking it up, until nearly done.
Add vegetables and stir fry until meat is fully cooked and vegetables are tender.
Add cooked noodles, sauce, and scallions. Toss and stir fry for about 3 minutes until evenly coated and heated through.
Serve immediately while hot.
