Ingredients
  

Dressing

  • 2 tablespoons extra-virgin olive oil
  • 3 tablespoons fresh lime juice
  • ½ garlic clove minced
  • ¼ teaspoon sea salt

Salad

  • 5 cups cubed watermelon
  • 1 heaping cup diced English cucumber
  • ¼ cup thinly sliced red onion
  • cup crumbled feta cheese
  • 1 avocado cubed
  • cup torn fresh mint or basil leaves
  • ½ jalapeño or serrano pepper thinly sliced (optional)
  • Sea salt to taste

Instructions
 

  • In a small bowl, whisk together olive oil, lime juice, minced garlic, and sea salt until fully combined.
  • Arrange the watermelon cubes, cucumber, and sliced red onion on a serving platter.
  • Drizzle half of the dressing over the fruit and vegetables.
  • Scatter the feta cheese, avocado, mint or basil, and sliced pepper over the top.
  • Pour the remaining dressing evenly across the salad.
  • Season lightly with additional sea salt if desired.
