Tzatziki Chicken Salad

Tzatziki Chicken Salad is made by mixing cooked chicken with Greek yogurt, cucumber, lemon, garlic, herbs, and feta for a fresh Mediterranean-style salad.

Ingredients
  

  • 1 cup plain Greek yogurt
  • ½ cup grated English cucumber excess moisture squeezed out
  • 3 tablespoons fresh lemon juice
  • 2 garlic cloves peeled and grated
  • 2 tablespoons fresh dill chopped
  • 2 tablespoons fresh parsley chopped
  • 1 teaspoon sea salt
  • ½ teaspoon freshly ground black pepper
  • 4 cups cooked chicken chopped or shredded
  • 1 cup diced cucumber
  • ½ cup diced celery
  • ½ cup diced red onion
  • ½ cup crumbled feta cheese

Instructions
 

  • In a medium bowl, combine Greek yogurt, grated cucumber, lemon juice, garlic, dill, parsley, salt, and pepper. Stir until smooth and well blended.
  • Add the chicken, diced cucumber, celery, red onion, and feta cheese. Stir gently until evenly coated.
  • Taste and adjust seasoning with additional lemon juice, salt, or pepper as needed. Serve chilled or immediately. This Tzatziki Chicken Salad is ready in minutes.

Notes

Serve over mixed greens, in a pita pocket, lettuce cups, wraps, or as a sandwich filling. Optional toppings include chopped tomatoes, kalamata olives, extra feta, or fresh herbs.
