Tropical Mango Salad – Fresh & Zesty Summer Bowl

Tropical Mango Salad combines juicy mango, avocado, sweet corn, and fresh lime dressing.

Ingredients
  

  • 2 cups lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1 red onion thinly sliced
  • 1 avocado diced
  • 2 limes juiced
  • 2 sweet corn cobs
  • 1 mango diced
  • 1 handful fresh cilantro chopped
  • 1 chili pepper finely sliced
  • 2 tablespoons olive oil
  • Sea salt to taste
  • Black pepper to taste

Instructions
 

  • Boil corn in medium heat water for 5–7 minutes, or microwave on high for 3–4 minutes. Let cool, then slice kernels off the cob.
  • Chop lettuce, tomatoes, onion, avocado, mango, cilantro, and chili pepper.
  • Juice the limes into a small bowl.
  • In a large mixing bowl, combine all vegetables, mango, and corn.
  • Drizzle with olive oil and fresh lime juice.
  • Season with sea salt and black pepper.
  • Toss gently and serve immediately.

Notes

• Use ripe but firm mango for best texture.
