Tropical Mango Salad – Fresh & Zesty Summer Bowl

Ingredients

lettuce

cherry tomatoes

red onion
thinly sliced

avocado
diced

limes
juiced

sweet corn cobs

mango
diced

handful fresh cilantro
chopped

chili pepper
finely sliced

tablespoons
olive oil
Sea salt
to taste
Black pepper
to taste
Instructions
Boil corn in medium heat water for 5–7 minutes, or microwave on high for 3–4 minutes. Let cool, then slice kernels off the cob.
Chop lettuce, tomatoes, onion, avocado, mango, cilantro, and chili pepper.
Juice the limes into a small bowl.
In a large mixing bowl, combine all vegetables, mango, and corn.
Drizzle with olive oil and fresh lime juice.
Season with sea salt and black pepper.
Toss gently and serve immediately.
Notes
• Use ripe but firm mango for best texture.
