Ingredients

For the Chicken Marinade

  • 2 boneless skinless chicken breasts, about 1 pound
  • 2 small limes zested and juiced
  • 1 tablespoon chopped cilantro
  • 2 tablespoons olive oil
  • 2 tablespoons tropical seasoning blend

For the Tropical Salsa

  • 1 cup pineapple diced
  • 1 kiwi peeled and diced
  • 1/2 cup strawberries diced
  • 1 cup mango diced
  • 1 cup watermelon diced
  • 1 tablespoon jalapeño finely chopped
  • 1 tablespoon cilantro chopped
  • 1 small lime zested and juiced
  • 2 1/2 teaspoons tropical seasoning blend

For the Nachos

  • Corn tortilla chips as needed
  • 8 ounces Monterey Jack cheese shredded
  • 4 ounces mild cheddar cheese shredded
  • 1/2 cup halal-friendly tropical tamarind sauce
  • Jalapeño slices optional
  • Fresh cilantro optional
  • Fresh pineapple half for serving optional

Instructions

  • Pat the chicken breasts dry with paper towels. Coat them evenly with the tropical seasoning.
  • Place the seasoned chicken in a food-safe resealable bag or covered container. Add the lime zest, lime juice, cilantro, and olive oil. Turn the chicken several times so it is thoroughly coated.
  • Refrigerate the chicken for at least 3 hours to allow the citrus, herbs, and seasoning to develop their flavor.
  • Meanwhile, prepare the tropical salsa. Add the diced pineapple, kiwi, strawberries, mango, watermelon, jalapeño, cilantro, lime zest, lime juice, and tropical seasoning to a mixing bowl.
  • Gently toss until combined. Cover and refrigerate the salsa while you cook the chicken.
  • If you would like a pineapple serving bowl, carefully cut a fresh pineapple lengthwise through the leaves. Score the flesh without cutting through the skin, then scoop out the pineapple with a spoon. Dice enough of the removed fruit for the salsa.
  • Preheat the grill to approximately 375°F (190°C). Remove the chicken from its marinade and discard all remaining marinade that has been in contact with the raw chicken.
  • Grill the chicken for approximately 5–7 minutes per side, depending on thickness, until the center reaches an internal temperature of 165°F (74°C).
  • Transfer the cooked chicken to a clean plate and let it rest briefly. Shred or chop the chicken, then toss it with the tropical tamarind sauce.
  • Preheat the oven to 425°F (220°C). Line a large sheet pan with parchment paper.
  • Arrange the tortilla chips in an even layer. If you plan to place the pineapple salsa bowl in the center for presentation, leave an open space in the middle.
  • Scatter the sauced chicken evenly over the tortilla chips, followed by the shredded Monterey Jack and cheddar cheeses.
  • Bake for approximately 5 minutes, or until the cheese is completely melted and the chips are warm.
  • Finish the Tropical Chicken Nachos with fresh cilantro and jalapeño slices, if desired. Serve immediately with the chilled tropical salsa on the side or spooned over individual portions.

Notes

Chicken thighs can replace chicken breasts if you prefer darker, juicier meat. Adjust the grilling time according to their thickness and always cook chicken to a safe internal temperature.
If watermelon is particularly juicy, place the diced pieces on paper towels briefly before adding them to the salsa.
Pepper Jack cheese can replace some of the Monterey Jack for additional heat, provided you choose a halal-friendly product.
For a simpler fruit salsa, use just pineapple, mango, strawberries, jalapeño, cilantro, and lime.
