Add double cream and Biscoff spread to a large mixing bowl.
Whisk together by hand until smooth and thickened. The mixture should hold soft peaks and look fluffy. Avoid over-whipping.
Pipe or spoon the mousse into serving glasses or ramekins. Smooth the tops evenly.
Melt the remaining Biscoff spread gently (microwave in short bursts).
Divide melted Biscoff over each mousse layer and spread until smooth.
Add a Biscoff biscuit on top and sprinkle with crushed Biscoff crumbs.
Refrigerate for 1–2 hours to set before serving.
