Ingredients
  

  • 2 peaches peeled and sliced
  • 4 slices sourdough bread or challah, multigrain, or thick white bread
  • 2 –4 tablespoons ricotta cheese optional
  • 1 tablespoon honey
  • 4 slices white cheddar cheese
  • 2 tablespoons butter
  • Optional:
  • 4 slices crispy turkey bacon
  • Fresh basil leaves
  • Balsamic glaze

Instructions
 

  • Peel and slice the peaches and set aside.
  • Spread ricotta cheese evenly over one side of each bread slice if using.
  • Layer sliced peaches on two bread slices.
  • Drizzle honey evenly over the peaches.
  • Place white cheddar cheese slices on the remaining bread slices.
  • Close the sandwiches with the cheese side facing the peaches.
  • Spread butter over the outside of each sandwich.
  • Heat a skillet or panini press over medium-low heat.
  • Place the sandwiches onto the heated surface.
  • Cook for 3–5 minutes per side, or until the bread is golden brown and the cheese is melted.
  • Reduce the heat if the bread browns too quickly before the cheese melts.
  • If using turkey bacon, fresh basil, or balsamic glaze, carefully open the sandwich after cooking and add the desired toppings.
