Add peanut butter, rice vinegar, tamari (or soy sauce), water, garlic, sesame oil, chili garlic sauce, honey, and ground ginger to a blender or food processor. Blend until smooth and creamy.
Reserve 3 tablespoons of the sauce for topping and set aside. The remaining sauce will be mixed into the burger patties.
Prepare the Burgers
In a large bowl, combine ground turkey, shredded carrots, chopped broccoli, green onion, cilantro, salt, red pepper flakes, and the remaining peanut sauce. Mix gently until just combined. Avoid overmixing to keep the burgers tender.
Form mixture into 4 equal patties.
Cook the Burgers
Heat a large skillet over medium-high heat and lightly spray with nonstick spray or brush with oil.
Cook patties for 3–4 minutes on the first side. Flip, spray lightly again if needed, and cook for another 3–4 minutes until fully cooked and no longer pink in the center. Internal temperature should reach 165°F (74°C).
Assemble
Place each burger on a bun. Top with about 2 teaspoons of the reserved peanut sauce and fresh baby spinach leaves.
