Ingredients
  

  • 1 lb ground beef
  • 1 can 10.5 oz cream of mushroom soup
  • ½ cup sour cream
  • 1 small onion diced
  • 2 cups shredded cheddar cheese divided
  • 1 bag 32 oz frozen tater tots
  • Salt to taste
  • Black pepper to taste
  • Garlic powder optional
  • Paprika optional

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In a large skillet over medium heat, cook the ground beef until browned. Add the diced onion and cook until softened. Season with salt, pepper, garlic powder, and paprika if desired. Drain excess fat.
  • Stir in the cream of mushroom soup and sour cream. Mix well and cook for 2–3 minutes until the mixture is warmed and creamy.
  • Lightly grease a casserole dish and spread the beef mixture evenly across the bottom.
  • Sprinkle 1 cup of shredded cheddar cheese evenly over the beef layer.
  • Arrange the frozen tater tots in a single layer across the top.
  • Bake the Tater Tot Casserole with Ground Beef for 25–30 minutes until the tater tots become crispy and golden.
  • Remove from the oven and sprinkle the remaining 1 cup of cheddar cheese on top.
  • Return to the oven and bake for another 5 minutes until the cheese is melted and bubbly.
  • Let the casserole rest for about 5 minutes before serving.

Notes

  • This casserole is great served with a simple side salad or steamed vegetables.
  • For a spicier version, add diced jalapeños or a pinch of chili flakes.
  • If you prefer homemade sauce, you can replace canned soup with a simple mushroom cream sauce made from butter, flour, milk, and sautéed mushrooms.
