Tater Tot Breakfast Casserole

Tater Tot Breakfast Casserole is a hearty dish made with eggs, cheese, sausage, and crispy potatoes.

Ingredients
  

  • Cooking spray
  • 1 medium yellow onion diced
  • 1 large green bell pepper diced
  • 1 lb beef breakfast sausage
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt divided
  • ½ teaspoon black pepper divided
  • 6 slices turkey bacon cooked and chopped
  • 2 cups shredded Colby-Cheddar or Colby-Jack cheese divided
  • 6 eggs
  • 1 ¼ cups milk
  • 1 package frozen tater tots

Optional:

  • Sour cream
  • Green onions
  • Hot sauce

Instructions
 

  • Preheat oven to 400°F (200°C). Grease a 9×13-inch baking dish.
  • In a skillet, cook onion, bell pepper, and beef sausage over medium-high heat until fully cooked (8–10 minutes).
  • Add garlic powder, Italian seasoning, salt, and pepper. Stir well.
  • Mix in 4 slices of chopped turkey bacon. Transfer mixture to baking dish.
  • Add 1 cup cheese and frozen tater tots. Toss evenly.
  • In a bowl, whisk eggs and milk. Season with remaining salt and pepper.
  • Pour egg mixture evenly over the casserole.
  • Top with remaining cheese and turkey bacon.
  • Bake for 25–35 minutes until set and golden.
  • Optional: Broil for 1–2 minutes for a crispy top.
  • Serve warm and enjoy your Tater Tot Breakfast Casserole.
