Tater Tot Breakfast Casserole

Tater Tot Breakfast Casserole is made by baking tater tots, eggs, cheese, and sausage together until golden and set. Perfect for feeding a crowd.

Ingredients
  

  • 1 pound beef breakfast sausage cooked and crumbled
  • 30 ounces frozen tater tots
  • 2 cups shredded Mexican blend cheese or cheddar cheese divided
  • 8 large eggs
  • 1 cup milk
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon granulated garlic or garlic powder
  • ½ teaspoon onion powder

Instructions
 

  • Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter and set aside.
  • In a large skillet over medium-high heat, cook and crumble the beef breakfast sausage until fully cooked.
  • Add the frozen tater tots, cooked sausage, and 1½ cups of cheese to the prepared baking dish. Stir to evenly distribute.
  • In a medium bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and onion powder.
  • Pour the egg mixture evenly over the tater tot mixture. Sprinkle the remaining ½ cup cheese on top.
  • Bake uncovered for 55–60 minutes, or until the eggs are set and the top is golden brown.
  • Let rest for a few minutes before slicing and serving warm. This Tater Tot Breakfast Casserole is best enjoyed fresh.

Notes

This casserole pairs well with fresh fruit or a simple green salad. You can substitute half-and-half for milk for a richer texture.
