Taco Loaded Potatoes

Taco loaded potatoes are crispy roasted potatoes topped with seasoned beef, cheese, and fresh toppings.They are easy to make and customizable with beans or vegetables.Perfect for a quick and satisfying family dinner.

Ingredients
  

  • 4 medium russet potatoes diced
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • ½ tsp ground cumin
  • Salt & pepper to taste
  • 1 lb ground beef or black beans
  • 1 packet taco seasoning
  • 1 cup shredded cheddar or Mexican blend cheese
  • ½ cup sour cream or Greek yogurt
  • ½ cup salsa
  • ¼ cup sliced green onions
  • ¼ cup chopped cilantro

Optional: diced tomatoes, corn, jalapeños, olives

Instructions
 

  • Preheat oven to 425°F (220°C).
  • Toss diced potatoes with olive oil, chili powder, smoked paprika, garlic powder, cumin, salt, and pepper.
  • Spread potatoes on a baking sheet and roast for 25–30 minutes, flipping halfway, until crispy and golden.
  • While the potatoes cook, brown the ground beef in a skillet over medium heat. Drain excess fat.
  • Add taco seasoning and a splash of water, simmer until thickened.
  • Remove potatoes from oven and divide into serving bowls. Sprinkle cheese over the hot potatoes.
  • Top with seasoned meat or black beans.
  • Add sour cream, salsa, green onions, and cilantro.
  • Serve immediately and enjoy your delicious taco loaded potatoes.

Notes

You can swap sour cream with Greek yogurt for a lighter option. Add avocado slices or guacamole for extra richness. This recipe also works great with leftover cooked chicken or beef.
