Taco casserole is an easy baked dinner made with ground beef, salsa, beans, tortilla chips, sour cream, vegetables, and cheese. Layer the ingredients in a baking dish, then bake at 350°F until hot and bubbly. It makes approximately 6 servings.
Preheat the oven to 350°F (175°C). Lightly coat a 9x13-inch baking dish with cooking spray.
Place a large skillet over medium-high heat. Add the ground beef and cook for 8–10 minutes, breaking it into small crumbles as it cooks. Continue until the beef is thoroughly browned and cooked through. Drain excess fat if necessary.
Add the salsa to the skillet and stir well. Reduce the heat and gently simmer for about 20 minutes, or until much of the excess liquid has been absorbed.
Stir the drained chili beans into the beef mixture and cook briefly until heated through.
Spread the crushed tortilla chips evenly across the bottom of the prepared baking dish.
Spoon the beef and bean mixture over the tortilla chips, distributing it evenly.
Carefully spread the sour cream over the beef layer. Scatter the sliced black olives, green onions, and chopped tomato over the sour cream.
Sprinkle the shredded Cheddar evenly over the top.
Bake the Taco Casserole for approximately 30 minutes, or until the filling is hot and the cheese is completely melted and bubbling.
Let the casserole rest for about 5 minutes before servin
Notes
For a lighter variation, substitute plain Greek yogurt for some or all of the sour cream.
