Sun-Dried Tomato Bacon Pesto Grilled Cheese
Sun-Dried Tomato Bacon Pesto Grilled Cheese is a crispy sandwich filled with cheddar cheese, pesto, turkey bacon, and sun-dried tomatoes.

- 4 slices good-quality white bread
- 1/2 cup pesto
- White cheddar cheese slices
- 4 slices turkey bacon cooked
- 1/3 cup oil-packed sun-dried tomatoes drained
- Softened butter
Spread pesto generously on one side of each slice of bread.
Place slices of white cheddar cheese on top of the pesto to cover the bread.
Add cooked turkey bacon and sun-dried tomatoes.
Top with additional cheese and place the second slice of bread on top to form the sandwich.
In a small bowl, mix softened butter with a small amount of pesto.
Spread the butter mixture on the outside of the bread.
Heat a skillet over medium heat.
Place the sandwich in the skillet and grill until the bread becomes golden brown and crispy and the cheese melts completely.
Flip carefully and cook the other side until toasted and melty.
Serve the Sun-Dried Tomato Bacon Pesto Grilled Cheese warm.
You can replace white bread with sourdough or ciabatta.
