Summer Sardine Salad Recipe
A quick and healthy summer sardine salad made with fresh vegetables and a lemon mustard dressing.

- 2 cups salad leaves
- ¼ cup sliced cucumber
- 1 tbsp sliced red onion
- 1 tbsp chopped parsley
- 1 can 100g sardines in spring water, drained
- 1 tsp capers
- 1 tbsp lemon juice
- 2 tsp olive oil
- 1 tsp mustard
Arrange the salad leaves on a serving plate.
Add sliced cucumber, red onion, and chopped parsley evenly over the leaves.
Place the sardines on top of the salad.
In a small bowl, mix capers, lemon juice, olive oil, and mustard until well combined.
Drizzle the dressing over the salad.
