Summer Sardine Salad Recipe

A quick and healthy summer sardine salad made with fresh vegetables and a lemon mustard dressing.

Ingredients
  

  • 2 cups salad leaves
  • ¼ cup sliced cucumber
  • 1 tbsp sliced red onion
  • 1 tbsp chopped parsley
  • 1 can 100g sardines in spring water, drained
  • 1 tsp capers
  • 1 tbsp lemon juice
  • 2 tsp olive oil
  • 1 tsp mustard

Instructions
 

  • Arrange the salad leaves on a serving plate.
  • Add sliced cucumber, red onion, and chopped parsley evenly over the leaves.
  • Place the sardines on top of the salad.
  • In a small bowl, mix capers, lemon juice, olive oil, and mustard until well combined.
  • Drizzle the dressing over the salad.

Notes

  • You can replace sardines with tuna if preferred.
  • Serve with toasted whole-grain bread or pita for a fuller meal.
