Ingredients

  • 1 pint cherry tomatoes halved
  • 1 medium cucumber chopped
  • 1 bell pepper diced
  • 1 cup snap peas sliced
  • 1 cup fresh corn kernels
  • ½ small red onion thinly sliced
  • ¾ cup crumbled goat cheese
  • ½ cup roasted sunflower seed kernels
  • ½ cup chopped fresh parsley or basil
  • 3 tablespoons extra-virgin olive oil or avocado oil
  • 3 tablespoons red wine vinegar
  • 1 garlic clove minced
  • ½ teaspoon fine salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes optional

Instructions

  • Wash and prepare all vegetables.
  • Add the tomatoes, cucumber, bell pepper, snap peas, corn, and red onion to a large serving bowl.
  • Sprinkle the goat cheese, sunflower seeds, and fresh herbs over the vegetables.
  • In a small bowl or jar, whisk together the olive oil, red wine vinegar, garlic, salt, black pepper, and red pepper flakes.
  • Pour the dressing over the salad just before serving.
  • Gently toss everything together until evenly coated. The goat cheese will lightly blend into the dressing, creating a creamy finish.
  • Serve immediately and enjoy this fresh Summer Salad while the vegetables are crisp.

Notes

  • Replace goat cheese with feta or grated Parmesan for a different flavor.
  • Use lemon juice instead of red wine vinegar for a brighter dressing.
  • Radishes, zucchini, or kohlrabi make excellent cucumber substitutes.
  • Pumpkin seeds, almonds, or roasted edamame can replace sunflower seeds.
  • Omit the cheese for a dairy-free version.
  • This salad is excellent alongside grilled chicken, steak, fish, or burgers.
