Ingredients

Summer Harvest Millet Bowl

  • 4 cups baby arugula
  • 4 cups romaine lettuce
  • 2 cups cooked millet
  • 4 peaches sliced
  • 4 small tomatoes diced
  • 1 English cucumber diced
  • 1 cup cooked corn
  • 1 avocado diced
  • ¼ cup pumpkin seeds

Dressing

  • ½ cup extra virgin olive oil
  • 3 –4 tablespoons apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon pure maple syrup optional
  • ¼ teaspoon garlic powder

Instructions

  • In a small jar or bowl, combine the olive oil, apple cider vinegar, Dijon mustard, maple syrup, and garlic powder.
  • Secure the lid and shake vigorously, or whisk until the dressing is smooth and emulsified.
  • Divide the baby arugula and romaine between four serving bowls.
  • Evenly top each bowl with the cooked millet, sliced peaches, diced tomatoes, cucumber, corn, avocado, and pumpkin seeds.
  • Drizzle generously with the prepared dressing.
  • Toss gently before serving to coat all ingredients evenly. This Summer Harvest Millet Bowl is best enjoyed immediately while the vegetables are crisp and fresh.

Notes

  • Nectarines can easily replace peaches.
  • Quinoa, brown rice, or farro can substitute for millet if preferred.
  • Spinach or mixed greens work well in place of arugula.
  • Add a squeeze of fresh lemon juice before serving for extra brightness.
  • Serve alongside grilled fish or roasted vegetables for a heartier meal.
