Street-Style Soy Noodles with Chicken

Sauce
- 2 tbsp oyster sauce
- 1 tbsp light soy sauce
- 1½ tbsp dark soy sauce
- 1 tbsp sesame oil
- 1 tsp sugar
Chicken
- 600 g boneless skinless chicken breast, finely sliced
- ½ tsp ground white pepper or black pepper
Stir-Fry
- 1 tbsp light olive oil or neutral oil
- 1 tbsp freshly minced garlic
- 2 spring onions sliced (white and green parts separated)
- ½ napa cabbage shredded
- 1 carrot julienned
- 500 g fresh egg noodles
To Serve
- Sesame seeds
- Chilli oil optional
- Black vinegar optional
Combine all sauce ingredients in a bowl and set aside.
In another bowl, toss the chicken with 1 tablespoon of the sauce and pepper.
Heat oil in a large pan over high heat. Cook the chicken for 1–2 minutes until just done.
Add garlic and the white parts of spring onions. Stir for 30 seconds until fragrant.
Add cabbage and carrot. Stir-fry for 2–3 minutes until slightly softened.
Add noodles, remaining sauce, and green spring onions. Toss well for 1–2 minutes until evenly coated.
Serve hot with sesame seeds, chilli oil, and black vinegar if desired.
