Strawberry Shortcake Popsicles

Strawberry shortcake popsicles made with yogurt and fresh strawberries.

Ingredients
  

  • 2 cups pureed strawberries
  • 1 cup crushed vanilla wafers divided
  • 2 cups vanilla yogurt
  • 1/3 cup honey
  • 6 paper cups or popsicle molds
  • 6 wooden popsicle sticks

Instructions
 

  • In a medium bowl, mix vanilla yogurt and honey until smooth.
  • Add 1/2 cup crushed vanilla wafers and stir to combine.
  • Prepare your cups or molds.
  • Add a layer of yogurt mixture, then a layer of pureed strawberries.
  • Repeat with another layer of yogurt mixture, leaving space at the top.
  • Sprinkle remaining crushed wafers on top.
  • Insert popsicle sticks into the center.
  • Freeze for at least 4 hours or until firm.
  • These strawberry shortcake popsicles are best enjoyed straight from the freezer for a cool, creamy bite.

Notes

You can swap vanilla wafers with graham crackers or digestive biscuits. These strawberry shortcake popsicles also work well with Greek yogurt for a thicker texture.
