Ingredients
  

For the Cinnamon Chips

  • 1 cup granulated sugar
  • 1 tablespoon ground cinnamon
  • 3 large flour tortillas
  • Extra-light olive oil or olive oil spray

For the Strawberry Salsa

  • 2 tablespoons fresh lemon juice
  • 1 tablespoon extra-light olive oil
  • ¼ teaspoon kosher salt
  • Pinch of ground black pepper
  • 1 tablespoon granulated sugar
  • 3 tablespoons chopped fresh basil
  • 3 cups fresh strawberries finely chopped
  • ½ tablespoon balsamic reduction optional

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • In a shallow bowl, mix together the granulated sugar and ground cinnamon.
  • Lightly coat a baking sheet with nonstick spray.
  • Stack the tortillas and cut them into triangles.
  • Arrange the tortilla triangles in a single layer on the prepared baking sheet.
  • Lightly spray both sides with olive oil.
  • Sprinkle generously with the cinnamon sugar mixture, flip the chips, and coat the other side.
  • Bake for 10–12 minutes, or until golden brown and crispy.
  • Meanwhile, whisk together the lemon juice, olive oil, salt, pepper, sugar, and chopped basil.
