Ingredients

For the Overnight Oats

  • 250 g 8.8 oz fresh strawberries
  • 2 teaspoons maple syrup
  • ¾ cup 180 ml almond milk or oat milk
  • ½ teaspoon vanilla extract
  • 1 teaspoon lemon zest
  • 1 cup 80 g old-fashioned rolled oats
  • 1 tablespoon chia seeds

Optional Toppings

  • Greek yogurt or coconut yogurt
  • Fresh sliced strawberries
  • Extra maple syrup
  • Chopped almonds
  • Granola
  • Hemp seeds
  • Mint leaves

Instructions

  • Wash and hull the strawberries.
  • Add the strawberries to a blender and blend until smooth.
  • Pour the strawberry puree into a medium mixing bowl.
  • Add the rolled oats, chia seeds, almond milk, vanilla extract, maple syrup, and lemon zest.
  • Stir everything until well combined.
  • Divide the mixture between two mason jars or containers with lids.
  • Refrigerate for at least 6 hours or overnight so the oats soften and absorb the liquid.
  • Before serving, stir the Strawberry Overnight Oats. Add a splash of milk if they are thicker than desired.
  • Top with yogurt, sliced strawberries, nuts, or granola before serving.

Notes

  • Old-fashioned rolled oats provide the best texture.
  • Quick oats create a much softer consistency.
  • Coconut milk gives a richer flavor.
  • Add blueberries, raspberries, or bananas for variety.
  • Lemon zest brightens the strawberry flavor without making it tart.
  • For a vegan version, use coconut yogurt instead of Greek yogurt.
