Strawberry Oatmeal Bars
Strawberry Oatmeal Bars are no-bake snack bars made with oats, almond butter, and homemade strawberry jam.

For the Oat Base
- 1 cup oat flour
- 1 cup rolled oats
- 1/3 cup almond butter
- 1 tablespoon coconut oil
- 3 tablespoons honey or maple syrup
For the Strawberry Jam Layer
- 1 cup fresh strawberries
- 1 tablespoon jaggery powder or sugar
- Splash of water
Prepare the Oat Base
In a large mixing bowl, combine the oat flour and rolled oats.
Add almond butter, coconut oil, and honey or maple syrup.
Mix until a crumbly texture forms and all ingredients are evenly combined.
Reserve about 1/3 cup of the mixture for the topping.
Form the Base Layer
Line an 8-inch square pan or container with parchment paper.
Press the remaining oat mixture firmly into the bottom of the pan.
Use the back of a spoon or measuring cup to create an even layer.
Make the Strawberry Filling
Add strawberries, jaggery, and a splash of water to a small saucepan.
Cook over medium heat, stirring occasionally.
Continue cooking until the strawberries soften and the mixture thickens into a jam-like consistency.
Remove from heat and allow to cool completely.
Assemble the Bars
Spread the cooled strawberry jam evenly over the oat base.
Sprinkle the reserved oat crumble mixture evenly across the top.
Press lightly to help the topping adhere.
Chill and Slice
Refrigerate for at least 2 hours.
Once firm, lift from the pan using the parchment paper.
Slice into bars and serve.

- Frozen strawberries can be used if thawed first.
