Strawberry French Toast Roll-Ups

Strawberry French Toast Roll-Ups are crispy, creamy, and easy to make.

Ingredients
  

  • 8 slices egg bread each 3/4-inch thick
  • 2/3 cup mascarpone cheese
  • 1/3 cup strawberry pie filling divided
  • 2 eggs
  • 2/3 cup milk
  • 2 tbsp butter divided
  • 1 tbsp icing sugar
  • 2 tbsp maple syrup

Instructions
 

  • Using a rolling pin, flatten each slice of bread to about 1/8-inch thickness.
  • In a small bowl, mix mascarpone cheese with 3 tablespoons of strawberry pie filling until smooth and creamy.
  • Spread a generous spoonful of the mascarpone mixture over one side of each bread slice. Roll each slice tightly into a log shape.
  • In a shallow dish, whisk together eggs and milk until fully combined. Dip each roll-up into the egg mixture, coating all sides evenly.
  • Heat 1 tablespoon butter in a large nonstick skillet over medium heat. Cook the strawberry French toast roll-ups in batches, turning frequently for about 4 minutes or until golden brown on all sides.
  • Repeat with remaining butter and roll-ups.
  • Transfer to a serving plate and dust with icing sugar.
  • Stir maple syrup with the remaining strawberry pie filling and spoon over the warm roll-ups before serving.

Notes

  • Brioche bread also works beautifully in this stuffed French toast recipe.
  • Add cinnamon or vanilla extract to the egg mixture for deeper flavor.
  • Serve with whipped cream, fresh berries, or powdered sugar.
  • For a richer brunch recipe, drizzle with extra maple syrup.
