Using a rolling pin, flatten each slice of bread to about 1/8-inch thickness.
In a small bowl, mix mascarpone cheese with 3 tablespoons of strawberry pie filling until smooth and creamy.
Spread a generous spoonful of the mascarpone mixture over one side of each bread slice. Roll each slice tightly into a log shape.
In a shallow dish, whisk together eggs and milk until fully combined. Dip each roll-up into the egg mixture, coating all sides evenly.
Heat 1 tablespoon butter in a large nonstick skillet over medium heat. Cook the strawberry French toast roll-ups in batches, turning frequently for about 4 minutes or until golden brown on all sides.
Repeat with remaining butter and roll-ups.
Transfer to a serving plate and dust with icing sugar.
Stir maple syrup with the remaining strawberry pie filling and spoon over the warm roll-ups before serving.
